Sweet and Sour Red Cabbage

This colorful and zesty side dish not only brightens up a table but also offers a wonderful balance of sweet, tangy and savory notes.

INGREDIENTS

1 small head red cabbage, thinly sliced

1 large onion, sliced 

2 Tbsp. butter

½ cup apple cider vinegar

⅓ cup brown sugar (or to taste)

½ cup water

1 tsp. salt

½ tsp. black pepper

1 tsp. ground ginger (optional)

INSTRUCTIONS 
  1. In a large pot, melt the butter over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes.
  2. Stir in the red cabbage and cook for 5 minutes, stirring occasionally until the cabbage begins to wilt.
  3. In a bowl, combine the apple cider vinegar, brown sugar, water, salt, pepper, and ginger (if using). Stir until the sugar dissolves.
  4. Pour the vinegar mixture over the cabbage and onions in the pot. Bring to a gentle boil, then reduce the heat to low.
  5. Cover and let it simmer for about 30-40 minutes, stirring occasionally, until the cabbage is tender. Taste and adjust seasonings as needed.
