Sweet and Sour Red Cabbage
This colorful and zesty side dish not only brightens up a table but also offers a wonderful balance of sweet, tangy and savory notes.
INGREDIENTS
1 small head red cabbage, thinly sliced
1 large onion, sliced
2 Tbsp. butter
½ cup apple cider vinegar
⅓ cup brown sugar (or to taste)
½ cup water
1 tsp. salt
½ tsp. black pepper
1 tsp. ground ginger (optional)
INSTRUCTIONS
- In a large pot, melt the butter over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes.
- Stir in the red cabbage and cook for 5 minutes, stirring occasionally until the cabbage begins to wilt.
- In a bowl, combine the apple cider vinegar, brown sugar, water, salt, pepper, and ginger (if using). Stir until the sugar dissolves.
- Pour the vinegar mixture over the cabbage and onions in the pot. Bring to a gentle boil, then reduce the heat to low.
- Cover and let it simmer for about 30-40 minutes, stirring occasionally, until the cabbage is tender. Taste and adjust seasonings as needed.
