Make Your Holidays Merry and Bright With These Easy Recipes 


The countdown to Christmas is on! With only a couple weeks left before the celebration, your holiday  preparations are likely well underway. Planning your holiday dinner menu in advance helps to alleviate any possible last minute stress that inevitably comes with the season. Some of the more popular holiday meals include turkey, ham, crown roast of pork, prime rib and tenderloin, but sometimes it’s nice to break from tradition and try something new. 


Spend less time in the kitchen, and more time with family and friends making holiday memories with these great recipes:


If beef is your go-to holiday meal, there’s no reason it can’t still be! Consider swapping out the prime rib or tenderloin for a sirloin roast. You’ll save money while enjoying a delicious roast, and who wouldn’t like that?


Turn a classic sirloin roast into an elegant and festive Christmas dinner bursting with flavor! A sweet-tart sauce is spooned over the roast, and then followed by a crunchy, creamy gorgonzola topping to finish. Pair with a Pinot Noir or Cabernet Sauvignon.

Whether you’re celebrating the Italian-American Christmas Eve tradition, the Feast of the Seven Fishes, or just looking for a special seafood dish for Christmas Eve or Day, then scallops are the perfect menu addition!


In this recipe, searing enhances the natural sweetness of the scallops, and the simple Romesco Sauce imparts a delicious, slightly smoky flavor. Tender and delicious, scallops cook quickly, so be sure to follow cooking times to avoid overcooking. Pair with a Chenin Blanc, Chardonnay or a Pinot Gris.

  • Crown Roast of Pork


    This roast is actually 2 pork loin rib roasts tied into a circle, and it makes an elegant centerpiece for a holiday dinner! Be sure to order ahead of time, and ask that the roast be “frenched,” which is simply cutting the meat away from the end of each rib so that part of each rib is exposed.

Chocolate Pecan Pie

Sweeten up the holiday with this decadent dessert!  Make your own crust (recipe follows) or save time and purchase one pre-made. 

Ingredients:

2 eggs

1 cup sugar

½ cup flour

½ cup butter, melted

1 T. vanilla

1 cup pecans, chopped

6 oz. semi sweet chocolate morsels 

1 unbaked pie crust

Instructions:

Preheat the oven to 350°F. Beat eggs slightly in a mixing bowl. Blend in sugar, flour, butter and vanilla. Stir in pecans, and chocolate morsels. Pour into the unbaked pie crust. Place a rim of foil around the edge of the crust during the first half of baking to prevent it from over browning.   Place pie into the preheated oven, and bake for 45-50 minutes or until golden brown. Cool and serve. Top with ice cream if desired.
