Peaches ~ A Summertime Chin-Drippin’ Favorite

Although there’s nothing like biting into a fresh, juicy, peach, there are so many delicious ways to enjoy them from breakfast to cocktails, condiments and desserts, and everything in between!

Selecting and Storing 

Whether you’re picking your own peaches or purchasing at a farmer’s market or local supermarket, choose peaches with firm, fuzzy skins that yield to gentle pressure when ripe. Ripe peaches are best eaten right away, but can be stored for a few days in the refrigerator. Placing in the refrigerator will slow down the ripening process and prevent the peaches from spoiling too quickly. 

Ripening

Peaches that are almost ripe can be placed stem down in direct sunlight, and will ripen within a day or two. The paper bag ripening method is best for peaches that will take slightly longer to ripen:

  • Place peaches stem down in a single layer in the paper bag, allowing some space in between
  • Loosely close the bag to trap the ethylene gas and encourage ripening and leave on the kitchen counter at room temperature
  • Check after 24 hours to be sure fruit doesn't over ripen

Canning and Freezing

INGREDIENTS 2-3 large ripe peaches, diced (about 2 cups) 2 large tomatoes, diced (about 2 cups) 1 red bell pepper, seeded and finely diced 1 fresh jalapeño, seeded and diced 1 clove garlic, minced ½ cup finely diced onion Juice of 1 lime ¼ cup chopped fresh cilantro Sea salt to taste Freshly ground black pepper to taste INSTRUCTIONS In a medium bowl, mix together the peaches, tomatoes, bell pepper, jalapeño, garlic, onion, cilantro, lime juice, salt and pepper Season to taste and chill until ready to use Serves 6
