Hosting a New England Clambake at Home

Longing for an end-of-summer get away in Cape Cod or coastal Maine and a traditional New England clambake with the sand, surf, and smell of the salty ocean air? Although not the same sensory experience, a New England style clambake at home can be the next best thing! You may be missing the sand and surf, but you’ll still enjoy those delicious flavors, and a one-pot meal that makes entertaining easy.


The name “clambake” implies the meal is baked yet it’s actually steamed over seaweed, which imparts rich flavor, making it a crucial ingredient. Clams, lobster, sausage (and sometimes hot dogs), potatoes and corn comprise the other key New England clambake ingredients.

Live shellfish (like clams and lobster) should be cooked the same day they are purchased, although, can be stored for 1 day if necessary. Be sure to discard any clams that are open or have big cracks or chips. If storing, clams need to breathe, so keep in an open container over ice. Lobsters should not be stored over ice, but rather in an open container packed with fresh seaweed or damp newspapers in the coldest part of the refrigerator. 


Clams need to be thoroughly cleaned because who wants to bite into sand and/or grit! A dedicated vegetable brush is ideal for scrubbing the outsides of the shells under cold running water, but heavy duty paper towels can also be used. 


A salt water soak helps clams purge any of that unwanted sand or grit. The ratio of salt to water is 2 tbsp salt dissolved in 4 cups of water. This recipe serves 4, but can easily be scaled for a larger crowd. Just grab a super large pot if you have one or 2 large pots.
