Green Bean Salad

INGREDIENTS

2 lbs. fresh green beans, cleaned and trimmed

1 ½ tbsp salt 

1 medium red onion, sliced

6 Roma tomatoes, each cut into 6 sections, lengthwise

2 tsp minced garlic

1 tsp sugar

2 tbsp olive oil

2 tbsp balsamic vinegar

Salt and pepper to taste


INSTRUCTIONS 

Bring a large pot of water to a rolling boil. Add salt. Drop beans into water and blanch for 2-3 minutes.


Remove beans from hot water and place immediately into cold water until completely cold. Drain beans well.


Combine beans, red onion, tomatoes, garlic, sugar, olive oil and balsamic vinegar in a large bowl.


Season with salt and pepper to taste.


Refrigerate for several hours.


Mix thoroughly prior to serving. Serves 8.
