Salted Caramel S'mores Foil Packs

Prep: 10 minutes • Grill: 10 minutes • Serves: 4
INGREDIENTS

Nonstick cooking spray

4 whole sheets Honey Maid Grahams, broken in half

2 (1.55-ounce) milk chocolate bars

4 large marshmallows

1/4 cup caramel topping

1/4 teaspoon coarse sea salt


INSTRUCTIONS 

1. Prepare outdoor grill for direct grilling over medium heat. Cut 4 (12-inch-square) sheets aluminum foil; spray with cooking spray.


2. Place 1 graham cracker half in center of each foil sheet; top with chocolate bars, marshmallows, caramel topping, salt and remaining 4 graham cracker halves. Bring 2 edges of foil up over s'mores and fold to seal; fold sides of foil to seal. Place packs, seal side up, on hot grill rack; cover and cook 5 minutes. Turn off 1 side of grill; place packs over unlit side of grill, cover and cook 5 minutes or until lightly browned and marshmallows begin to melt.


3. Carefully open packs to serve.

In large saucepot, heat salt, sugar and 4 cups water to a boil over high heat, stirring occasionally; remove from heat. 2. Add beer, cinnamon sticks, orange juice, orange zest, orange slices, star anise, coriander, cardamom, fennel, allspice, nutmeg, cloves and 12 cups cold water to salt mixture; use immediately or refrigerate until ready to use. CHEF TIP(S): To brine a 12 to 14 pound turkey, remove neck, giblets and liver from turkey. Place turkey in 3-gallon saucepot or bucket. Pour cooled brine over turkey; place heavy plate or bricks on top of turkey to completely submerge turkey in the brine. Refrigerate turkey in brine at least 12 or up to 18 hours.
